Summer's almost here!

Well, let me slow it down a bit. I understand that it's not all beaches and palm trees in many of the cities across the country. As a matter of fact, word on the street is that the east coast is getting hammered with brisk winds and a bit of snow! I feel for ya but that doesn't mean that you can't create a little sunshine of your own in your lovely home. Hang in there summer's just around the corner but in the meantime let's get our cocktail on!

I absolutely love Reed's Jamaican Ginger Beer or sometimes called ginger brew, and just in case you're new to it, it's not a beer at all. It's an healthier yet stronger version of a ginger ale. I spotted this delicious drink at Trader Joe's. I fell in love and I've been creating a few ginger brew cocktails ever since. So I thought that I'd share this delicious creation with you. Say hello to the Pineapple Jamaican Ginger Fizz.

Make yourself one or even two of these and I guarantee you'll start dancing in your own make believe tropical paradise, even if there's 10 inches of snow outside your window. Your secrets safe with me.

Here's what you'll need: Fyi: Although I give measurements here. It's Friday and you may need that extra kick my friend. Go ahead and pour to taste!  (drink responsibly)

Fresh or frozen pineapple diced

2 oz Coconut or pina colada vodka

4 oz Reed's Extra Ginger Brew

Mint leaves

Combine ingredients and pour over ice and if you're feeling fancy, mix in shaker and pour into a martini glass.

*And for you non-coconut lovers, switch it up by preparing a Moscow Mule, which consists of vodka, lime juice, Reeds Ginger Beer and muddled mint.*
