Growing up as a child I always had a love for Pop Tarts and danishes. So I created a quick and easy pastry that your family will love. Oh, and Mother's Day is approaching and what better way to celebrate by preparing that special lady in your life a strawberry pastry. Not only is this quick and sassy to prepare, it also screams I LOVE YOU!

1 sheet (half of a 17.3-ounce package) puff pastry, thawed
1/4 cup cream cheese, at room temp
1 Tablespoon strawberry jam *Don't be cheap. We work with good for you ingredients over here. Wink*
1 1/2 cups sliced strawberries
1 large egg


Preheat the oven to 400ºF. Line a baking sheet with parchment paper or a Silpat.

Cut the puff pastry into six rectangles by following the perforations in the dough to first cut the sheet into three long rectangles and then cut each rectangle in half to form two smaller rectangles. Transfer the pastries onto the baking sheet, arranging them at least 1 inch apart.

Lightly score the dough by cutting a border 1/2-inch from the edges (do not cut through the pastry). Prick the center of the pastry several times with a fork.

In a small bowl, stir together the cream cheese and strawberry jam or if you're like me, I popped both into the processor and let the machine do the work for me. Okay, let's move on. Place a dollop of the cream cheese mixture in the centers of each pastry and spread it within the scored area. (If you have some leftover, pop it into a covered container, refrigerate and serve later over crackers or as a dip for your favorite veggies. Delish!) Top the cream cheese with the sliced strawberries.

Whisk together the egg with 1 Tablespoon water. Brush the edges of the pastry with the eggwash then bake the pastries for 10 to 15 minutes until golden and puffed.

Remove the pastries from the oven oven, cool for 3-5 minutes and drizzle the honey over top.

Yummy! Serve with momma's favorite beverage or introduce her to a Della a la Rossini.
